Temp problems on a mk3

Hi
Can someone help, I have a mk 3 ,the temp gauge drops to nothing and engine revs up to between 1500 to 2000 revs, have bled the coolant system twice, once when cold and once when warm, still does it.
At a loss as to what it could be, any advice would be gratefully appreciated.
